The township of Novato, California is bounded on the west by the townships of San Antonio and Nicasio, on the south by the township San Rafael, on the east by the San Pablo Bay, and on the north by the County of Sonoma. The San Antonio creek meanders next to its northern boundary, and emerges at the northeastern point of the township into the San Pablo Bay. Although, there aren’t any large streams that run through Novato, the primary ones are arroyo Achiva, arroyo San Jose, and Novato creek.
There is a large portion of salt marsh land next to the Eastern side of Novato, which is, obviously, level, and low. However, the points of the high land add to the beauty of the scenery as viewed when passing up the bay on board a steamer that extends to the bay, and serve to break up the boredom of the topography. The balance of this country is very mountainous and broken. Generally, the mountains aren’t very high, and the most extensive range is known as the Olompali Hills. Lying cut off from these mountains are numerous lovely and extensive valleys that are fertile in beauty and rich in soil.
The farmer is sure to realize the full realization of all his labors, in these charming glens, and the products of the soil are poured into his harvests with a plentiful hand, being the monetary return, which is always equal to the yield.
All throughout the township of Novato the soil is a sandy, rich loam, and is particularly rich in the valleys. It is especially adapted to the growing of vines, fruits, vegetables, and grains. On all of the mountains and hills, grass grows very opulently over which large cattle herds cattle roam, and feeding upon the succulent and sweet grasses, which will yield rich milk.
The products of this region are as diverse as any in the county. In these valleys, the grains prosper, as also do vegetables such as potatoes. Fruits are also found to do extremely well, particularly in those valleys that are open towards the bay. Small fruits and vines are grown with immense success wherever they are planted. The scarceness of vineyards and orchards in this region isn’t the result of the fact that they won’t thrive, but rather that the land is mostly used for dairying purposes, and the users don’t care to make any such unending improvements upon these farms.
One particular extensive orchard is located just northwest of the township of Novato and in a valley that opens to the southeast, and well protected on the west and north by a high series of hills. In this orchard there are some 20,000 apple trees, 500 almond trees, 600 peach trees, 200 cherry trees, 3,000 apricot trees, and 500 pear trees. Located nearby is a vineyard that contains 8,000 vines in it, and the yield from all these vines and trees will favorably compare with any in California. With the exception of the apple trees, the other produce is sent to market at once. A large portion of the apples are crushed, and vinegar and cider are made from the apple juice. The user has all the required appliances for this purpose for the complete implementation of the desired object. A steam powered roller crushes the apples.
Then, the pulpy residue is passed into the basement of the structure where the press is located. Here a cheese is constructed upon a frame that is five square feet, and then wrapped in strong gunny cloth. Next, this is passed under a very strong and large press, which is powered by four strong screws, which by a sequence of cog wheels that are affixed to the engine. There are two frames and grinding machines building the cheeses upon. One cheese will be under the press, while the other one is under construction. Each cheese will yield between five and seven 40-gallon barrels each, of cider depending of the quality and the season of the fruit.
Usually, one barrel of cider will be yielded from ten bushels of apples. This takes four men to operate this machinery, and the average yield daily is around 1,600 gallons of cider. Then, the pulpy residue is placed into large casks and permitted to stand until it reaches fermentations, when it is again pressed, and will yield an amount of apple juice that will equal around 25%, of the original quantity of apples that was removed from it. Next, the cider is pumped into a primary conductor and then transported to the store room and into some large storage tanks. The remains are then drawn off after around three or four months and placed in clean tanks. Usually, it will be drawn off two more times at the end of between 15 and 18 months when it is considered to be ready for the marketplace.
